BANANA MUFFINS

My girls absolutely love these muffins!! We make them all the time and they never last very long:) I think I got it from the All Recipes website.

Banana Oatmeal Muffins

1 1/2 cups flour
1 cup rolled oats
1/2 cup white sugar
2 t baking powder
1 t baking soda
1/2 t salt
1 egg
3/4 cup milk
1/3 cup veggie oil(I use applesauce instead-tastes better)
1/2 t vanilla
1 cup mashed bananas

Combine dry ingredients. In separate bowl, beat egg lightly. Stir in milk, oil and vanilla. Add bananas and mix well. Stir in dry ingredients until just combined. Fill greased muffin cups 2/3 full. Bake at 350 for 18 to 20 minutes. Yummylicious!

Whole Wheat Pancakes

This is my family's favorite go-to breakfast recipe. I love them with plum syrup but the boys all love them with a fried egg and maple syrup. They're super quick in the blender and are great for rotating through your food storage wheat.

1 c. buttermilk
1 c. whole wheat

Blend together for 3-4 minutes.

Add:

2 eggs
1/2 c. oil
1/2 c. cottage cheese
3 T. brown sugar
1 t. vanilla
1 t. soda

Blend until combined

Baked Potato Soup

Prep time: 20 Min
Cook Time: 1 hour 30 min
Serving Size 12 (at allrecipes.com you can adjust your recipes to whatever serving size you need)

Ingredients:
8 baking potatoes
1 1/3 cups butter
1 1/3 cups all purpose flour
12 cups milk
2 c chopped green onions
1 1/2 teaspoons salt
1 t ground black pepper
24 slices cooked bacon crumbled
10 oz shredded cheddar cheese
2 (8 oz) containers sour cream

1. Bake potatoes 1 hour in a 400 degree oven. Scoop out the inside of the potatoes and set aside.
2. Melt the butter in a large skillet over med. low heat. Stir in the flour to make a roux. Cook about 1 min. Stirring constantly. Gradually pour in the milk while stirring until all the milk has been added. Bring heat to med and keep stirring until the soup mixture starts to get thick.
3. Add the potatoes, green onions, salt, black pepper, bacon and cheese. Stir well and continue to heat for 15 min, allowing flavors to blend. Stirring well, mix in the sour cream until well blended with the soup. Serve immediately.

Noodles

This is a picture of my girls eating noodles at Norma Mae's, or Grandma Greats as she likes to be called. Norma Mae's noodles taste a little different, one of these days I'll ask her what her secret ingredient is.
I dunno if there is a real recipe for noodles. Just noodles and tomato juice.
